Pimentos recheados e estufados
125g de arroz
sal
150g de tomate
2 cebolas
1 maçã
azeite
40g de miolo de pistácio
30g de sultanas
2 pimentos verdes
Coza o arroz em água com sal até ficar macio. Misture o arroz com o tomate, as cebolas e a maçã, tudo descascado e picado. Salteie depois numa frigideira, com 2 c. (sopa) de azeite por dois minutos. Adicione os pistácios e as sultanas. Lave e corte os pimentos em metades no sentido da largura. Recheie-os com o preparado anterior e coloque-os num tabuleiro de forno. Regue com azeite e leve ao forno pré-aquecido durante 20 minutos. Sirva quentes ou frios com salada verde.
Dica: Pode substituir os pimentos por curgetes cortadas em metades e escavadas.
