MOLHO DE AMÊNDOAS
Ingredientes:
5 dl de caldo de carne
2 colheres de sopa cheias de manteiga
1 cebola média picada
20 grs. de farinha
sal q.b.
pimenta moída na altura q.b.
noz-moscada q.b.
30 grs. de miolo de amêndoa
Confecção:
Pela-se as amêndoas e ralam-se. Refoga-se a cebola na manteiga e, quando começar a alourar, junta-se a farinha, envolvendo bem. Adiciona-se o caldo de carne quente, ao qual se juntou a amêndoa ralada, mexendo sempre em lume brando cerca de 10 minutos. Tempere com sal, pimenta e uma pitada de noz-moscada.
N.B.: Este molho acompanha bem carnes panadas, carnes grelhadas e peixes fritos.
