PERDIZ FRITA À MODA DE COIMBRA

Ingredientes:

4 Perdizes
2 Cebolas
1 Copo de azeite
1 Copo de vinho branco
1/2 Copo de vinagre
3 Cravinhos
Pimenta em grão
Pimenta em pó
Sal

Preparação:

Preparam-se as perdizes, atam-se e colocam-se num tacho com todos os ingredientes. Tapa-se o tacho o mais hermeticamente possível e deixa-se cozer sobre lume brando até cebola ficar muito macia.

Estas perdizes servem-se frias acompanhadas com batata-palha ou batatas cozidas.
