Tostada de bacalhau com coulis de pimento
Ingredientes
Para 4 pessoas
4 fatias de pão regional com côdea
Vaqueiro Alho
1 lombo de bacalhau (sem pele nem espinhas)
1 pimento verde
1 pimento vermelho
1 pimento amarelo
óleo Vaqueiro
Preparação
Toste levemente as fatias de pão na torradeira, numa chapa ou numa grelha sobre brasas. Barre o pão com Vaqueiro Alho e reserve.
Ponha o lombo de bacalhau a assar juntamente com os pimentos na chapa ou na grelha sobre brasas. Vá virando os pimentos e o lombo de bacalhau. Quando os pimentos estiverem assados, meta-os num saco de plástico e mantenha-os abafados durante 5 a 10 minutos para retirar a pele com mais facilidade.
Entretanto lasque o bacalhau. Limpe os pimentos de peles e sementes e rasgue-os em tiras.
Deite metade das tiras do pimento vermelho e do amarelo no copo da varinha mágica, junte 1 a 2 colheres de sopa de óleo Vaqueiro e reduza a puré com a varinha.
Distribua as lascas de bacalhau pelas fatias de pão, enfeite com as tiras de pimento e sirva acompanhado com o coulis de pimentos (numa colher torta).
