MOAMBA DE PEIXE

Tempo de preparação: 1 hora aproximadamente.

Para 4 pessoas

Ingredientes:

300 g de abóbora
2 Dentes de alho
2 Beringelas
2 Cebolas
1 dl de óleo de palma
1 kg de pargo
250 g de quiabos
Gindungo (piripiri) q.b.
Sal q.b.

Preparação:

Lave o peixe, corte-o em postas e tempere com sal.
Descasque as beringelas, corte-as às rodelas, coloque-as sobre um passador, polvilhe com sal grosso e deixe descansar durante 10 minutos.
Passe rapidamente por água e enxugue com papel absorvente.
Pique as cebolas e os alhos e leve ao lume com óleo de palma para alourar.
Junte os quiabos cortados aos bocados, a abóbora partida aos quartos e as beringelas e deixe estufar em lume brando.
Adicione um pouco de água e junte o peixe.
Rectifique o sal e tempere com gindungo (piripiri) a gosto.
Acrescente a água necessária para obter um molho espesso e abundante e deixe cozer o peixe.

Nota - Sirva com arroz branco ou, de preferência, com funge, como é tradição angolana.
