BACALHAU À BRUXA DE VALPAÇOS

Ingredientes: (para 6 pessoas)

1 Kg de bacalhau
6 Cebolas
2 Alhos
1 dl de azeite
1 Colher de sopa de manteiga
50 g de toucinho
600 g de batatas
3 Colheres de sopa de vinagre
3 Colheres de sopa de farinha de trigo
1 Ramo de salsa
Sal e pimenta.

Preparação:

Deixe o bacalhau a demolhar durante 48 horas.
Depois, tire-lhe a pele e as espinhas.
Corte as cebolas às rodelas.
Pique o toucinho e corte os alhos às tiras.
Cubra o fundo do tacho com uma porção das cebolas, sobre estas coloque uma porção de bacalhau e sobre este coloque uma porção de batatas, de toucinho e dos restantes condimentos.
Polvilhe com uma colher de farinha.
Faça isto sucessivamente até completar três camadas de cada ingrediente.
Adicione o azeite, tape o tacho e leve ao lume (cerca de 30 minutos), regando sempre com o próprio molho.
